Apricot Walnut Squares

This is one of the best desserts I’ve ever made.  It is so good–but you can be the judge of that by making a batch.  As you can see from the picture of the ingredients in the slide show, you don’t need much.  You could also make this recipe using other kinds of pie filling:  strawberry, cherry, blueberry, whatever. 

1 cup butter
2 cups flour
1/2 cups sugar
1 cup chopped walnuts
2 cups apricot pie filling
(you can also use any pie filling from a 20 oz. can)

Preheat oven to 350.
Prepare baking dish by greasing it with either margarine or Pam.

Put flour and sugar into a bowl.  Add the butter (make sure it is softened)and mix with a fork until crumbly.  Add the chopped walnuts and mix.  The mixture will still be very crumbly.

Place 3/4 of the mixture into the baking dish.  Using the bottom of a glass, press the mixture down firmly into the baking dish.

Pour the apricot pie filling over the flour mixture and spread out to the edges of the pan.

Using the remainder of the flour mixture, sprinkle it over the apricots, allowing it to remain crumbly.

Bake at 350 for about 45-50 minutes.  Make sure the middle of the apricots is bubbling before removing from oven. 

Let cool and cut into squares.
