Peach Bundt Cake

This cake was featured on a cooking show (not on Food Network) and the lady who was making it (who is a pastry chef) said her father said it was the best cake he had ever eaten. Wow!! So I thought I’d give it a try this week. Turns out it was very good.

1 white cake mix
1/2 cup vegetable oil
1/2 cups water
1 small package vanilla pudding
3/4 cups sour cream
1 teaspoon vanilla
3 eggs
1 can peach pie filling

Prepare a bundt cake pan by greasing and flouring generously.

Preheat oven to 350.

Place all the ingredients in a big mixing bowl. Mix on low speed for 1 minute, then medium speed for 2 minutes.

Layer 1/2 of the batter in the bundt cake pan.

Carefully layer the peach pie filling on top of the batter, making sure not to get it near the edge of the pan.

Layer the rest of the batter on top of the pie filling.

Bake at 350 for 1 hour.

When finished, cool in pan for a few minutes, then turn over on a cake plate. Frost with a light drizzled frosting:

1/2 cup butter

1 cup powdered sugar

several teaspoons milk

Mix this and drizzled over the cake once it has been cooled.
